Ginger Rice Cake

Ginger rice cake is a typical Chinese new year food. It is a deliciously soft and sweet rice cake that symbolises progress, advancement, and growth for the new year.

Ingredients

  • 300 g Glutinous Rice Flour

  • 75 g Wheat Starch

  • 1 Tbsp Coconut Milk

  • 30 g Ginger Juice

  • 275 g Brown Sugar

  • 490 mL Water

Method

1. In a pot, add water (490 mL) and brown sugar (275 g). Heat until all the brown sugar has dissolved and let it cool down.

2. Sieve coconut milk (1 tbsp) and ginger juice (30 g) into the sugar mixture.

3. Add glutinous rice flour (300 g) and wheat starch (75 g). Mix well and then filter the batter with a sieve.

4. Spread oil (½ tsp) in the cake mould, sieve the batter in the mould and stem over medium heat for 1 hr.

Notes

  • Adjust the amount of ginger juice according to your preference.

  • Pay attention to the steamer water level every 15 to 20 min to prevent it from drying out.

  • It can be stored in the refrigerator for up to 1 week.

  • Pan fry the rice cake to serve.
